Black Bean and Avocado Salsa
1/2 can black beans, rinsed and drained
1 ear of fresh corn kernels
1 medium tomato, chopped into 1/2 inch cubes
1 avocado, chopped into 1/2 inch cubes
1/4 cup, or less, of red onion, diced
juice of 1 lime
1/2 tsp cumin (don't be afraid of this spice - it makes this salsa awesome)
salt and pepper to taste
Mix all ingredients together and enjoy with tortilla chips. It is also a great salad-topper or taco-topper too!
